    These vessels are well-suited for the diverse and flavorful dishes of Indian cuisine due to their heat retention and even cooking properties. In the Indian way of seasoning a cast iron vessel, you can follow these steps:
  • Wash the cast iron vessel with warm water and a mild detergent. Scrub it with a sponge or brush to remove any impurities and dry it thoroughly.
  • Heat the vessel on a stove and let it become completely dry.
  • Once dry, turn off the heat and let it cool for a few minutes.
  • Apply a thin layer of cooking oil (preferably a high-smoke-point oil like mustard oil or sesame oil) to the entire surface, inside and out, using a cloth or paper towel.
  • Place the oiled vessel back on the stove over low heat for about 10-15 minutes to allow the oil to penetrate the iron.
  • Turn off the heat and let the vessel cool completely.
